Mushrooms, tomatoes and potoato fry-up

I love my savoury breakfasts so will boil kumara and potato then cut them up and fry them in olive oil with mushrooms, tomatoes, chilli, spinach, garlic, asparagus and sometimes tofu, put it on toast with quarter of an avocado... heaven!

First a banana- everyday; then I mix oat bran, ground flax, apple butter(or sauce) a little Fruit 2 Day juice, milk or almond milk, almonds and berries (fresh or frozen), then heat it for a minute in the microwave. It satisfies me till lunch.

Cottage Cheese, Yogurt, and Granola

I found fat free cottage cheese, Kroger low carb yogurt, and crushed granola (ground in a blender) to be high in protein, low in fat, filling, and tastes great. Food Storage

Good Morning Corn Muffins

My go-to breakfast is steel cut oats with almond milk, but I like to mix things up. I've recently been enjoying vegan corn muffins, heated up and spread with Earth Balance or cherry jam. Check out the recipe on my blog http://dinnerpeace.blogspot.com.

Hot cereal/grains with pb&j or other nuts, fruit; whole grain honey wheat bagel with honey; smashed beans on toast; poached eggs on toast and piece of fruit; healthy cold cereal; oatmeal pancakes from fatfreevegan.com; porridge w/nuts & fruit. Plus herbal tea or hot water with lemon.

It's whats for breakfast

I like tofu wraps. I start by drying the firm tofu with papertowels then put in a bowl with chik nish seasoning. In a large frying pan add whatever vegetables you like. I like mushrooms, green and red peppers, onions, asparagus, potatoes, tomatoes, stir until warm and to firmness you like. Then add in tofu and scramble all together. Put on whole wheat flour tortilla shells. You can add vegetarian cheese and I like to add heinz 57 sauce. These can be made ahead of time and frozen take out and microwave for about 45 seconds breakfast on the run and it will hold you over until lunch. Mmmmmm Good :)

Soy milk

I buy a nut/fruit mix muesli and mix it about 50-50 with processed bran -usually one bag of each from the supermarket mixed in a plastic cereal container. I take my serving and add low fat soy milk.. In summer it's great cold but in winter it gets microwaved and thickens to a nice porridgey consistency.

Everything but Meat

Vegetarian breakfasts are easy! Just cut out the bacon, sausage and other meats. You can still eat almost every breakfast food like cereal, waffles, French toast, pancakes, toast, muffins, etc.

Hot /cold cereal

In winter I eat hot multi-grain cereal with almond milk or sometimes steel cut oatmeal with cinnamon and raisins. I let it cook while I do other things to prepare for work. When the weather warms up I eat cold cereal,usually Shredded Wheat with almond milk. On weekends I have multigrain pita with natural peanut butter on Saturday. I add apple pieces and/or raisns. On Sunday I have 2 boiled eggs with multigrain bread or pita and coffee.

What I eat for breakfast

For many years I have only eaten fresh fruit for breakfast - which usually consists of a small pawpaw (papaya), a nectarine and a banana - or whatever else is in season.
