These raw food diet lettuce wraps have a hint of Mexican spiciness to them, hence the "burrito" simile. Made with ripe avocados, tomatoes, onions, jalapeno peppers, corn, and spices, with some freshly squeezed lime juice added for that extra "tangy" taste, then wrapped in lettuce leaves, these wraps make a great entree for a raw food meal or a raw food potluck. Because they're so easy to make and tasty, they're a great raw transitional food too. They're vegetarian, vegan, and naturally gluten-free, of course. 

Serve these wraps with some fresh fruit and a smoothie to round out the meal. Enjoy this raw berry dessert sauce on raw granola or sliced bananas for dessert.

Ingredients

  • 2 very ripe avocados

  • 3 tomatoes, diced

  • 1/2 jalapeño pepper, diced

  • 2 tablespoons diced yellow onion

  • 3 cloves garlic, minced

  • 1/4 cup chopped fresh cilantro

  • 3/4 cup corn kernels, from 1 ear raw corn

  • 2 teaspoons freshly squeezed lime juice

  • 6 to 8 large lettuce leaves

Steps to Make It

  1. Gather the ingredients.

  2. In a medium sized bowl, mash the avocado.

  3. Add tomatoes, jalapeño, onion, garlic, cilantro, corn, and lime and stir until well mixed.

  4. Spread 2 to 3 tablespoons of this mixture onto lettuce leaves and wrap.

Tips

  • Use the freshest ingredients you can find when making these wraps to get the ultimate flavor.
  • Fresh iceberg lettuce seems to work the best for making lettuce wraps.

Recipe Variation

  • Instead of lettuce, you can try using nori seaweed or cabbage as the wraps for these "burritos."
  • Make a Vegan Balsamic Vinaigrette Salad Dressing and drizzle it on the mixture before wrapping, or use the dressing to dip the "burritos" into when eating.
