With just a few simple ingredients added to a basic yellow cake mix, this vegan pineapple upside-down "dump" cake is ready to pop into the oven in just two minutes. It's called a "dump" cake because that's what you do. No mixing needed, just dump the ingredients right into the cake pan. If you're vegan, be sure to use a vegan cake mix, such as Duncan Hines.

This pineapple dump cake recipe will be a hit even with people who aren't vegan, since it really is an "accidentally vegan" recipe.

"Semi-homemade" cake mix recipes, which turn store-bought boxed cake mix into something a little more special, are very popular. Vegan cake mix lends itself to a variety of recipe options, like cookies or even slow cooker dump cakes. The limit is your imagination.

Ingredients

  • Butter, for pan

  • 1 (20-ounce) can pineapple, crushed, undrained

  • 1 (20-ounce) can fruit pie filling, cherry, blueberry, or your choice

  • 1 box yellow cake mix

  • 1/2 cup vegan margarine, softened

  • 1/4 cup walnuts, or pecans, chopped, optional

  • 2 tablespoons brown sugaroptional

Steps to Make It

  1. Gather the ingredients.

  2. Lightly grease a single layer round or square cake pan. Preheat oven to temperature indicated on box of cake mix.

  3. Dump undrained crushed pineapple into lightly greased cake pan and spread into an even single layer. Then, dump pie filling on top of crushed pineapple and again spread into an even single layer.

  4. Cover pie filling and pineapple with powdered cake mix right out of box, then drizzle or crumble vegan margarine on top of cake mix.

  5. Sprinkle top with some nuts and brown sugar, if desired.

  6. Bake pineapple dump cake according to directions on box of cake mix.
