This is a simple and fresh Israeli-style salad made with pearl couscous (also called Israeli couscous), tomatoes, cucumbers and fresh parsley and lemon juice. If you're not eating vegan, you might like to crumble a bit of feta cheese on top. If you like tabbouli, you'll like this similar vegetarian and vegan salad. Although the recipe is quite dependent on the fresh chopped parsley for flavor, I might try this sometime with fresh chopped cilantro, or perhaps a blend of herbs as well.
