  • Potato (approx. 1/2 potato makes one patty)
  • Mixed frozen vegetables carrot, corn, peas, etc.
  • cilantro
  • chili powder, to taste
  • salt, to taste
  • lemon juice
  • 2 tbsp diced onion
  • bread crumbs


Boil the potatos and mush them in a bowl. Mix vegetables, cilantro, onion, chili powder, salt, lemon juice. Use bread crumbs or pieces of bread to help the mixture bind together and make patties.

Spray a pan with non-stick cooking spray and heat your vegan patties till they turn a little brown on each side.

let me start off by saying that i very rarely limit my diet to non-meat based products. i was initially quite skeptical about the ability of potatoes to satisfy my rather significant appetite. as this was prepared in the kitchen of a cohort, i was forced to make do with the ingredients at hand, which included mixed vegetables with a distinct spanish twist. i also wish we had mashed the potatos a bit better; we are quite weak and our spindly limbs were no match for the formidable potato. as such, we had to cope with tiny chunks of potato in the burger. there were also no buns in the house, so we had to eat the potato burger sans buns. the slight departure from the recipe (due entirely to the unforeseen hand of fate) did nothing to detract from the taste of these glorious starched goods. i will be remaking these tiny patties of joy sometime soon, hopefully without all the missteps.
