Ingredients:
- 3 cups brown rice, pre-cooked
- 2 cups soft bread crumbs (use a gluten-free and wheat-free bread)
- 1 1/2 cup mixed vegetables, finely chopped (try carrot, mushrooms, corn and peppers)
- salt and pepper to taste
- 1/8 cup vegetable oil
Preparation:
Mix ingredients (except oil) together and form 25 patties about 3/4 inch thick using 3/4 cup mixture per patty.Fry in oiled pan for 8 minutes on each side over medium high heat. Serve alone or on a whole wheat or gluten free bun on bread with lettuce and condiments.
