Gluten-Free Brown Rice Veggie Burgers

Gluten-Free Brown Rice Veggie Burgers. Recipe courtesy of Ener-G Foods. This veggie burger recipe is both vegetarian and vegan, and, can be made gluten-free and wheat-free. You might also want to try this recipe for a gluten-free veggie burger with mushrooms.

Ingredients:

  • 3 cups brown rice, pre-cooked
  • 2 cups soft bread crumbs (use a gluten-free and wheat-free bread)
  • 1 1/2 cup mixed vegetables, finely chopped (try carrot, mushrooms, corn and peppers)
  • salt and pepper to taste
  • 1/8 cup vegetable oil

Preparation:

Mix ingredients (except oil) together and form 25 patties about 3/4 inch thick using 3/4 cup mixture per patty.

Fry in oiled pan for 8 minutes on each side over medium high heat. Serve alone or on a whole wheat or gluten free bun on bread with lettuce and condiments.
