Recipe courtesy of Ener-G Foods. This veggie burger recipe is both vegetarian and vegan, and, can be made gluten-free and wheat-free. You might also want to try this recipe for a gluten-free veggie burger with mushrooms.
Ingredients:
- 3 cups brown rice, pre-cooked
- 2 cups soft bread crumbs (use a gluten-free and wheat-free bread)
- 1 1/2 cup mixed vegetables, finely chopped (try carrot, mushrooms, corn and peppers)
- salt and pepper to taste
- 1/8 cup vegetable oil
Preparation:
Fry in oiled pan for 8 minutes on each side over medium high heat. Serve alone or on a whole wheat or gluten free bun on bread with lettuce and condiments.
