Quick and Easy Mexican Enchilada Sauce Recipe
Try this recipe for a quick and easy homemade enchilada sauce recipe and make your own home made enchilada sauce. This Mexican food recipe is both vegetarian and vegan. Use your homemade enchilada sauce to make portabella mushroom enchiladas or try these vegetarian black bean and veggie enchiladas.

Ingredients:

  • 2 tbsp vegetable oil
  • 2 tbsp flour
  • 2 tbsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper, or to taste
  • 2 cups water
  • 1 8 ounce can tomato paste
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Preparation:

Heat the oil, flour and chili powder together in a large pot. Allow to cook for a minute or two.

Add the remaining ingredients and bring to a slow simmer. Stir well to combine and dissolve tomato paste in water. Allow to cook for at least 20 minutes, stirring occasionally. Add more spices as desired.

Added Ingredients To This Recipe & Made Best Ever, Guest Onenorahs

I am known for my fajitas, tamales, quesadillas, rice and cheese dips- but never found a red sauce recipe that is better than my favorite canned. If I found one I'd pour it on everything!! I usually use La Preferida brand. Was out tonight when making tamales so made this recipe. It missed something- so I added 2 tbl Emporador red mole paste (it's like a boulion deep red pasty substance) a med can of that runny Old El Paso mild Enchalada sauce and 1 chic boullion cube. Cooked it to thickish red sauce consistency. The complexity and flavor was amazing. Never had anything like it anywhere!! Froze the rest and bookmarked this page. Thanks!!
