Quick and Easy Mexican Enchilada Sauce Recipe
Try this recipe for a quick and easy homemade enchilada sauce recipe and make your own home made enchilada sauce. This Mexican food recipe is both vegetarian and vegan. Use your homemade enchilada sauce to make portabella mushroom enchiladas or try these vegetarian black bean and veggie enchiladas.

Ingredients:

  • 2 tbsp vegetable oil
  • 2 tbsp flour
  • 2 tbsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper, or to taste
  • 2 cups water
  • 1 8 ounce can tomato paste
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt

Preparation:

Heat the oil, flour and chili powder together in a large pot. Allow to cook for a minute or two.

Add the remaining ingredients and bring to a slow simmer. Stir well to combine and dissolve tomato paste in water. Allow to cook for at least 20 minutes, stirring occasionally. Add more spices as desired.

Excellent Enchilada Sauce! I got compliments!, Guest A New College Cook

So, I'm new to cooking (aka I'm a college student). I decided to make vegetarian enchiladas the other night for my family but didn't have enchilada sauce on hand (not to mention it's healthier homemade). So, I found this recipe and it was excellent. Note I did make some substitutions: 1. I didnt' have tomato paste. I used a can of tomato sauce, then cut down the water portion by half. 2. I used taco seasoning for the chilli powder 3. I used carne asada seasoning for the paprika 4. I added a pinch of oregano and lemon pepper just for kicks. 5. Based on other reviews, I ommitted mushrooms and used zucchini instead 6. I doubled the vegetable portions (e.g. 1 cup of zucchini instead of 1/2 cup) cause I like my enchiladas well-filled!! The sauce was very flavorful and not at all spicy, but definitely added to the enchiladas!
