WIth just a few simple ingredients, this vegan tofu pudding is a great dessert recipe and is appropriate for vegans and vegetarians during Phase One of the South Beach Diet. Use either one teaspoon of regular peanut butter or 2 tablespoons of natural peanut butter, as allocated by the South Beach diet for Phase One. If you're not on a low-carb or South Beach diet, you may find this pudding a bit bland, so I suggest adding 1/4 cup peanut butter instead of 2 tbsp, as well as 1/4 cup maple syrup.

- 1 container silken tofu, preferably lite
- 1/4 cup unsweetened plain cocoa powder
- 2 tbsp natural, unsweetened peanut butter OR 1 tsp reuglar peanut butter
