South Beach Diet Vegan Tofu Pudding Recipe

Looking for vegetarian South Beach diet recipes? With just a few simple ingredients, this sugar-free vegan tofu pudding is a great dessert recipe and is appropriate for vegans and vegetarians during Phase One of the South Beach Diet. Use either one teaspoon of regular peanut butter or 2 tablespoons of natural peanut butter, as allocated by the South Beach diet for Phase One. If you're not on a low-carb or South Beach diet, you may find this pudding a bit bland, so I suggest adding 1/4 cup peanut butter instead of 2 tbsp, as well as 1/4 cup maple syrup.

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 1 container silken tofu, preferably lite
  • 1/4 cup unsweetened plain cocoa powder
  • 2 tbsp natural, unsweetened peanut butter OR 1 tsp regular peanut butter

Preparation:

Blend or puree all ingredients in a food processor until smooth. Enjoy!

This is also a high-protein low-carb vegetarian and vegan dessert recipe.

Needed improvement, Guest Katie

I am changing my diet to more vegetarian/veganish and have a huge sweet tooth. I found this recipe and made it exactly as recommended. It was extremely bitter to the taste. I added agave nectar, coffee liquor and chocolate syrup to bring up the sweet factor. After these changes, it is pretty good. If I make tofu pudding again, I will use another recipe.
