Fried plantains are a common snack just about everywhere you can find plantains, including the tropics and the Caribbean. If you like making fried plantains, try this recipe to spice up your regular fried plantain recipe for Kwanzaa or anytime with this recipe using cayenne powder, ginger and pepper for plenty of Caribbean flavor. Use slightly underripe plantains for the best results.
Ingredients:
- 4-5 ripe plantains, sliced on a diagonal into 1/2 inch rounds
- oil for frying
- 2 tsp lemon juice
- 3 tsp powdered ginger
- 3 tsp cayenne pepper
- 1 tsp nutmeg
Preparation:
In a wide dish, pour the lemon juice over the plantains, gently turning to coat each side.
In a separate shallow dish, mix together the ginger, cayenne and nutmeg.
Gently toss the lemon-coated plantains in the spices, a few pieces at a time, and fry in oil until golden brown and crispy.
