Ingredients:
- 4-5 ripe plantains, sliced on a diagonal into 1/2 inch rounds
- oil for frying
- 2 tsp lemon juice
- 3 tsp powdered ginger
- 3 tsp cayenne pepper
- 1 tsp nutmeg
Preparation:
In a wide dish, pour the lemon juice over the plantains, gently turning to coat each side.In a separate shallow dish, mix together the ginger, cayenne and nutmeg.
Gently toss the lemon-coated plantains in the spices, a few pieces at a time, and fry in oil until golden brown and crispy.
