One Pot Crock Pot Rice Pilaf

With seitan for protein along with rice and veggies, this simple and easy low-fat pilaf is a full meal in one pot so you can get your rice, veggies and protein all in one dish in this one pot easy vegetarian and vegan crock pot meal, which simmers all day in flavorful broth and wine. It's vegetarian, vegan, low-fat and cholesterol-free. Add additional seasonings to taste, perhaps a bit of hot sauce or seasoned salt.

Ingredients:

  • 1 1/2 cups seitan, cut into pieces
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1/2 cup green peas
  • 1 carrot, chopped
  • 1/4 cup dry white wine
  • 2 1/2 cups vegetable broth
  • 1 3/4 cups rice

I should have known before I started. This recipe has no herbs or spices. Salt and pepper would be a good place to start but once the food was cooked, nothing I tried could make it palatable. I ended up throwing it away.
