This vegan crock pot vegetable chili recipe doesn't skimp on the veggies or the flavor. Just place all the ingredients in your crock pot or slow cooker, and come home to a healthy and complete vegetarian meal. Get your five-a-day servings of vegetables! Make a double-batch and get creative with your leftover chili!

Ingredients:

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red or yellow bell pepper, chopped
  • 2 carrots, grated or sliced thin
  • 1 1/2 cup corn
  • 1 zucchini, diced
  • 2 cans kidney beans
  • 2 15 ounce cans diced tomatoes
  • 1/2 cup water
  • 1 1/2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp red pepper flakes
  • dash cayenne pepper
  • dash tabasco sauce (optional)

Preparation:

Combine all ingredients in a crock pot or slow cooker. Cover and cook on low for 6-8 hours.

Five stars with a few modifications, Guest Courtney

This has the makings of an awesome chili. My first batch, however, was too bland. My second batch was AMAZING, and I modified the recipe by cooking the black beans (I always use dry) in chicken broth to add flavor (veggie broth would work as well to keep it vegetarian/vegan). I also added several drops of liquid smoke flavor to the beans. I used a large can of Red Gold Diced Tomatoes with Chipotle seasoning for the tomatoes instead of plain diced tomatoes, and added half a jar of black bean and corn salsa and a little bit of Lawry's Seasoning. With the first dish, I added shredded cheese to give it flavor. NONE is needed for the second batch with these modifications!
