Crock Pot Vegetarian Stew with Seitan Recipe

A vegetarian stew made in the crockpot with seitan as a meat substitute. This vegetarian crock pot recipe uses seitan instead of meat for a classic and hearty "meat" and potatoes stew. Feel free to add a few of your favorite fresh or dried herbs for extra flavor.

Ingredients:

1 pound seitan, chopped
1 onion, diced
5 cups vegetable broth
2 tbsp soy sauce
3 cloves garlic, minced
2 tomatoes, diced
3 carrots, diced
3 potatoes, chopped
2 stalks celery, diced
1 tsp salt
3/4 tsp pepper
4 tbsp cornstarch mixed with 4 tbsp water until smooth

Preparation:

Place all the ingredients in a crock pot or slow cooker. Cook on low for 6 to 8 hours.

Sautee the seitan in a little bit of olive oil first, if you'd like. If you're pressed for time, you don't need to, but it will give the seitan a bit of extra flavor if you do.

Tasty business, Guest

I had no celery so substituted green pepper. Also dusted the seitan with flour and fried it briefly before chucking it in the cooker, as well as pre-frying the onion. Used only 4 cups of stock and therefore a little less than 2 tbsp of soy sauce. It was the first time I had ever cooked or even eaten seitan and it turned out great! Wife and I really liked this - both had seconds. Definitely be making this again.
