Ingredients:
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tbsp parsley
- 1 tsp salt
- pepper to taste
- 7-8 potatoes, sliced thin
- 8 oz cream cheese (use Tofutti if vegan)
Preparation:
In a small bowl, combine the onion, garlic, parsley, salt, and pepper.
Place a layer of the sliced potatoes on the bottom of the crock pot. Sprinkle with some of the onion and garlic mix. Top with 1/3 of the cream cheese.
Continue layering potatoes, spices and cream cheese. Sprinkle the top with additional salt and pepper.
Cover and cook on high for 3-4 hours, or until potatoes are done cooking.
