Vegan Chocolate Peanut Butter Crock Pot Cake

Two readers have tested out this chocolate peanut butter crock pot cake recipe and given it five out of five stars. Chocolate, peanut buttery and soft and fudgy, this crockpot cake is a keeper! It's dairy-free and completely vegan, too. Eat it warm and fresh out of the crockpot, topped with vegan ice cream.

Ingredients:

  • 1 cup flour
  • 1/2 cup sugar + 3/4 cup
  • 3 tbsp cocoa powder + 1/4 cup
  • 1 1/2 tsp baking powder
  • 1/2 cup soy milk
  • 2 tbsp vegan margarine, melted
  • 1 tsp vanilla
  • 2 cups boiling water
  • 1/2 cup peanut butter

Preparation:

In a large mixing bowl, combine the flour, 1/2 cup sugar, 3 tbsp cocoa powder and baking powder. Whisk in the soy milk, vegan margarine and vanilla and mix until smooth. Pour into a lightly greased crock pot or slow cooker.

Combine the 3/4 cup sugar and 1/4 cup cocoa. In a separate bowl, combine the boiling water and peanut butter and whisk till smooth. Add to the cocoa and sugar mixture and mix until well combined. Pour over the batter in the crock pot.

Cover and cook on high for 2 to 2 1/2 hours, until a knife inserted into the center comes out clean.

I have to say I was pleasantly surprised at how well this cake turned out. It went together relatively quickly with ingredients I had on hand. I can't remember if the directions said to spray the crockpot with nonstick cooking spray, but I did for easier clean up. I followed the recipe exactly, with the exception of the cooking directions. I decided to cook it on low for about 4 hours and 20 minutes. It came out perfect! This is a wonderful dessert for summer since you don't need to heat the oven. I didn't have a problem mixing the first ""layer."" It's about the consistency of brownie batter and spread nicely on the bottom of the pot. This would be awesome served with ice cream, which I plan on doing tonight. Also, those people out there who don't think veg*ns eat delicious food, one bite of this peanut butter fudgy cake will have them singing a different tune! Thanks for the great recipe. This one is definitely a keeper!!
