Ingredients:
- 1 vegetarian Chicken Free Chicken, cut into 1 inch cubes
- 1 red or green pepper, cut into 1 inch cubes
- 1 red Spanish onion, cut into 1 inch cubes
- 1 small eggplant, cut into 1/2 inch slices
- 8 ounces of mushrooms
- 12 8 inch bamboo skewers
- 1 clove garlic, minced
- 1/2 cup wine
- 2 tbsp olive or canola oil
- 1 tbsp Braggs Liquid Aminos or soy sauce
- 1 tbsp lemon juice
- 1 tbsp basil
- 1/4 tsp crushed red peppers, or to taste
Preparation:
Make a marinade by blending the wine, oil, lemon juice and spices.Build kabobs by alternating vegetables and Chicken Free Chicken on skewer, placing a mushroom cap on each end. Coat kabobs in marinade.
Cook under broiler or on barbecue, 5 to 7 minutes, turning often. Serve on rice.
