Red wine marinade for grilling tofu or vegetables

Tofu is always at its best when its been marinated for hours, whether you'll be grilling it, baking it or broiling it. Use this simple red wine marinade to flavor your tofu, add some veggies, and viola! You've got an easy tofu kabob that can go right on the grill.

If it's not grilling season, use this red wine marinade to prepare broiled tofu and veggies.

Ingredients:

  • 2 cloves garlic, minced
  • 1/2 cup red wine
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp basil
  • 1/4 tsp red pepper flakes (optional)
  • 1 block firm or extra firm tofu, well pressed, sliced into 1-inch cubes
  • Optional veggies: mushrooms, chopped eggplant, bell peppers, pineapple
  • bamboo skewers for grilling

Preparation:

Whisk together all ingredients except tofu and veggies to make a marinade. Place marinade in a shallow pan or zip-lock bag.

Add tofu and veggies, covering well with marinade. Allow to marinate for at least one hour, longer is better.

Place tofu and veggies on bamboo skewers and grill for about 5 minutes on each side.

These marinated veggies and tofu can also be prepared in the oven, using your oven's broil setting.
