Double the marinade and add some veggies, if you'd like: eggplant, zucchini, yellow squash, tomatoes and mushrooms all grill well.
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tsp basil
- 1 tsp thyme
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
To use as a marinade for grilling tofu:
First, press your tofu well to remove any excess liquid. Place the marinade in a shallow pan or zip-lock bag and add the tofu, making sure to coat well. Allow the tofu to marinate for at least one hour, and up to overnight.
Place tofu on bamboo skewers and grill for 8-10 minutes, or until lightly browned on each side.
