Grilled olive and tomato panzanella

A grilled bread salad with green olives, tomatoes and hot sauce.

A spicy olive, tomato and bread skewer inspired by an Italian panzanella salad and lightly toasted over a fiery grill - the perfect side or started for a gourmet vegetarian or vegan barbecue. Your friends will be so impressed with your vegetarian barbecue skills! This is one of those recipes where the quality of the ingredients really matters, so be sure to use a nice artisan bread and a good olive oil.

Ingredients:

  • 2 Tbsp hot sauce
  • 2 Tbsp quality olive oil
  • 2 tsp water
  • 20 cherry or grape tomatoes, whole
  • 20 green olives, whole
  • 20 chunks quality bread, torn into 1-inch chunks
  • sea salt and pepper, to taste

Preparation:

Whisk together the hot sauce, olive oil and water until well combined. Lightly coat the bread, tomatoes and olives with the sauce mixture, and allow to sit for at least two hours.

Arrange ingredients on skewers, and coat again with any remaining sauce. Season lightly with sea salt and pepper, to taste.

Place over a medium-hot grill, and heat, turning once, for 3-4 minutes, or just until bread is lightly toasted on all sides.
