Grilled asparagus is always a tasty and easy vegetarian and vegan side dish at your summer backyard or beachside barbecue. Here, grilled asparagus is paired with a simple homemade mustard vinaigrette to bring out the fresh summer flavors even more. If you like grilled asparagus, you won't be disappointed!
- 1 pound fresh asparagus
- 1 Tbsp olive or canola oil
- salt and pepper, to taste
- 1/4 cup olive oil
- 2 Tbsp honey or agave nectar
- 2 Tbsp Dijon mustard
- 1 1/2 Tbsp cider vinegar or lemon juice
Toss together asparagus with olive oil, coating well, then season well with salt and pepper. Place asparagus on the grill and cook for at least 5 minutes, turning occasionally. do not overcook.
Whisk or blend together remaining ingredients until well emulsified and pour over asparagus or toss together just before serving. Season with additional salt and pepper to taste.
