Cheesey Vegetarian Stuffed Potato Skins with Vegetarian Bacon Bits

Make some cheesey vegetarian potato skins with vegetarian bacon bits!

Ingredients:

  • 6 potatoes
  • vegetable oil for frying
  • 1 cup shredded Cheddar cheese
  • vegetarian bacon bits
  • 1/4 cup scallions, minced
  • sour cream

Preparation:

Pre-heat oven to 375 degrees and lightly grease a baking sheet.

Microwave or bake potatoes just until soft. Allow to cool slightly, then slice potatoes in half lengthwise and scoop out the soft inside, leaving the skins about 1/3 inch thick.

Deep-fry the potato skins until lightly crisp, about 5 minutes. Allow to drain on paper towels.

Stuff each of the potato skins with cheese and about 1 teaspoon of vegetarian bacon bits.

Bake for 10 minutes, or until the cheese has melted.

Top each potato skin with a spoonful of scallions and a dollop of sour cream.
