Cheesey Vegetarian Stuffed Potato Skins with Vegetarian Bacon Bits

Make some cheesey vegetarian potato skins with vegetarian bacon bits! In this fun snack recipe, potato shells are fried until crisp, then filled up with scallions, sour cream, cheese and vegetarian bacon bits. Perfect for the Superbowl!


  • 6 potatoes
  • vegetable oil for frying
  • 1 cup shredded Cheddar cheese
  • vegetarian bacon bits
  • 1/4 cup scallions, minced
  • sour cream


Pre-heat oven to 375 degrees and lightly grease a baking sheet.

Microwave or bake potatoes just until soft. Allow to cool slightly, then slice potatoes in half lengthwise and scoop out the soft inside, leaving the skins about 1/3 inch thick.

Deep-fry the potato skins until lightly crisp, about 5 minutes. Allow to drain on paper towels.

Stuff each of the potato skins with cheese and about 1 teaspoon of vegetarian bacon bits.

Bake for 10 minutes, or until the cheese has melted.

Top each potato skin with a spoonful of scallions and a dollop of sour cream.
