Onion and Apple Tarts with Goat Cheese

Vegetarian onion and apple tart

For an elegant fall or Thanksgiving appetizer, try these savory onion and apple tarts, made with either feta or goat cheese. These little onion apple tarts are vegetarian, but for a vegan version, you could use vegan dough and omit the cheese. Recipe and photo courtesy the US Apple Association.

Ingredients:

  • 2 tbsp olive oil
  • 6 onions, thinly sliced
  • 2 medium apples, thinly sliced
  • 1 13.8 ounce can refrigerated pizza dough
  • 1/2 cup crumbled goat cheese or feta cheese
  • 2 tbsp chopped fresh thyme OR 2 tsp dried thyme

Preparation:

Pre-heat oven to 425 degrees.

In large, nonstick skillet, over medium-low heat, heat oil. Add onions and half of the apples; cook, stirring occasionally, until very soft and begin to caramelize, about 25 minutes (mixture will appear to "melt" and become spreadable).

Meanwhile, coat baking sheet with non-stick spray. Press dough into rectangle on baking sheet. Prick dough all over with fork to prevent bubbling.

Bake the dough until lightly brown, about 10 minutes; remove from oven.

Spread apple-onion mixture over dough; sprinkle with cheese. Just before serving, top with thyme and remaining sliced apples.

Heat oven to broil. Broil on high until apples begin to wilt, about 1 minute.

Cut into squares and serve. Makes 16 vegetarian appetizer servings
