Vegan Bruschetta with Garlic

You won't miss the cheese in this cheeseless bruschetta recipe if you use good quality, organic ingredients. Shop your local farmer's market for the best tomatoes you can find, fresh artisan bread, and be sure to use the best fresh basil and quality olive oil. You could try using another gourmet oil for this vegan bruschetta as well. Perhaps avocado oil or macadamia nut oil, if you happen to have some.

Ingredients:

  • 3/4 cup olive oil
  • 5-6 cloves garlic, minced
  • 6-8 fresh tomatoes, diced
  • sea salt, to taste
  • 1 baguette, sliced about 3/4 inch thick
  • extra olive oil for brushing bread

Preparation:

Pre-heat broiler oven.

Over medium heat, heat the garlic in olive oil for 2 to 3 minutes. Add tomatoes and allow to cook for another 5 to 7 minutes.

Brush both sides of bread with olive oil and sprinkle generously with sea salt. Place bread slices on baking sheet, and top each slice with about 1 tablespoon of tomato and garlic mixture.

Broil for 2 to 3 minutes.

Needs some tweaks, Guest Sam

Though this turned out really well, some adjustments should be made. 3/4 cup of olive oil is, bluntly, overkill. I used a 1/4 cup and it was still too much. I suggest 2 teaspoons to as much as 1 tablespoon olive oil for the cooking. The amount of garlic was good, but you'll only really need two medium/large tomatoes. Maybe if you use grape tomatoes you could use 6 to 8. The rest of the recipe was great; the finished product tasted amazing and I used the entire mixture. Just tone down the oil and tomatoes when you try it. And you totally should!
