Ingredients:
- 5-6 potatos, boiled just until soft, then cooled
- 1/2 cup vegan mayonnaise (I like Vegenaise brand best)
- 3 tbsp vinegar
- 1 medium onion, diced
- 2 stalks celery, diced
- 1/3 cup sliced black olives (optional)
- 1/4 cup vegetarian bacon bits (optional)
- salt and pepper to taste
Preparation:
Once the potatoes have cooled, peel if desired, and chop into bite-sized pieces.Gently toss together all the ingredients in a large bowl, seasoning with salt and pepper to taste. Chill for at least one hour before serving.
