Black Bean and Mango Salad Recipe

Vegetarian mango and bean salad

Black beans and mangoes combine with fresh bell pepper and fresh cilantro in this simple vegetarian, vegan, high-protein and gluten-free bean salad recipe. The flavors are simple, yet the combination is quite tasty. Use sea salt or kosher salt for the best taste.

Ingredients:

  • 1 15.8 ounce can black beans, drained and rinsed
  • 2 cups mango, diced
  • 1 cup sweet red bell pepper, diced
  • 6 green onions, thinly sliced
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 1 seeded Jalapeno pepper, minced or hot sauce to taste
  • Salt to taste

Preparation:

Combine all ingredients, including beans in bowl. Toss and serve.

This is def a keeper. I was looking for recipes with mango because I had some I wanted to use them in a different way. I had no hopes in this salad because it looks so simple. Big mistake. The combination of flavors is just perfect. And the touch of heat brings the whole salad to live. I need to say the portion is very little. For 2 people tops. I prepared this for dinner and made brown rice also, and that way it was enough.
