Asian-inspired Garbanzo Bean Salad

An Asian-inspired garbanzo bean salad (or chickpea salad, depending on where you're from) perfect for a vegetarian summer picnic. If you like bean salad, try this garbanzo bean salad with veggies and the flavors of Asia. Recipe courtesy of Bush's® Beans.

Ingredients:

  • 1 14 ounce bag frozen broccoli florets
  • 1/2 box (6 ounces) frozen snow peas
  • 2 16 ounce cans garbanzo beans, drained and rinsed
  • 2 8 ounce cans water chestnuts
  • 4 tbsp olive oil
  • 4 tbsp rice vinegar
  • 4 tbsp lite soy sauce
  • 4 tbsp sesame seeds
  • 2 tbsp honey

Preparation:

In medium pan, cook broccoli florets and snow peas until thawed.

While broccoli and peas are simmering, heat small saucepan over medium heat and add remaining ingredients, including garbanzo beans. Cook until warm, stirring occasionally.

Combine both mixtures, toss and serve.
