Spinach salad with cranberries and vegetarian bacon recipe

Ingredients:
- 1 package vegetarian "bacon" (use Smart Bacon brand)
- 2 tablespoons vegetable oil
- 10 once package of fresh spinach
- 1/2 cup dried cranberries
- 1 cup diced tomatoes
- 1/3 cup pistachios, shelled
- 1/3 cup gorgonzola cheese
Preparation:
Fry the vegetarian "Smart Bacon" in a skillet with vegetable oil on medium-high heat for 2-3 minutes. Allow to cool, then chop.
Combine the vegetarian bacon with spinach, cranberries and the remaining salad ingredients.
Toss with a sweet vegan shallot salad dressing just before serving.
