This easy vegan cranberry and pear salad with Italian dressing is a simple and quick fall salad for vegetarians and vegans. Try it for Thanksgiving or Christmas. To keep everything fresh, try it with a simple homemade vegan vinaigrette.
Ingredients:
- 8 cups mesclun salad greens
- 1/2 red onion, sliced thin
- 4 fresh pears, quartered and cut into long, thin slices
- 1/3 cup dried cranberries
- 1/3 cup toasted pine nuts or sliced almonds (optional)
- Italian dressing or a fruity vinaigrette
- dash salt and pepper, to taste
Preparation:
Gently toss the mesclun greens with the red onion, cranberries and pine nuts or almonds.
Divide the salad amongst 4 serving plates or bowls, and arrange the sliced pears on top. Drizzle with dressing and a light shake of salt and pepper.
