Vegan Strawberry Banana Muffins

Ingredients:

  • 3 ripe bananas, mashed
  • 3/4 cup light brown sugar
  • Ener-G egg replacer for 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup vegan margarine, softened
  • 2 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • dash nutmeg and cinnamon
  • dash salt
  • 1 cup diced strawberries (fresh or frozen is ok)

Preparation:

Pre-heat oven to 350 degrees and grease or line a muffin pan.

Beat together the bananas, brown sugar, egg replacer, vanilla and vegan margarine.

In a separate bowl, combine together the flour, baking powder and baking soda, nutmeg, cinnamon and salt. Add to the banana mixture and stir just until combined. Gently fold in the strawberries.

Fill each muffin about 2/3 full with batter. Bake for 20 - 25 minutes, or until an inserted toothpick comes out clean.

Mmmm... yummy moist vegan muffins! :), Member veggiegrl123

I made these muffins with pretty low expectations since most vegan muffin recipes yield dry, crumbly results.... Not these! They are so moist+ yummy. The strawberries really add another dimension and take the flavor to the next level! I substituted white flour for whole wheat and added flax seed for the extra omega 3's. I would definitely recommend these to anyone with taste buds.
