Ingredients:
- 3 tsp Ener-G Egg replacer
- 2 tbsp cold water
- 1 1/2 cups sugar
- 1 tsp vinegar
- 1/2 cup hot water
- 2 tbsp vegan margarine
- 1 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp almond extract
Preparation:
In bowl beat Egg Replacer and cold water together until foamy. Set aside.Combine sugar, vinegar and hot water. Bring to boiling, stirring constantly. Cover and cook without stirring. After 3 minutes turn heat down to medium and bake another 4 minutes. Mix in vegan margarine.
Pour the syrup over Egg Replacer mixture in a fine stream. Beat vigorously. Add baking powder, vanilla and almond extract. Beat until mixture is creamy. Cool until hard enough to spread on cake.
