Soft Vegan Molasses Cookies


These eggless vegan molasses cookies are made with and egg-free egg-replacer, so they're cholesterol-free and lower in fat than other molasses cookies. With raisins for extra sweetness and just a half cup of sugar, these are a soft and decadent treat to feel good about. I love molasses cookies! Recipe courtesy of Ener-G Foods.

  • ​2 cups plus 2 tbsp flour
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tsp baking soda
  • 1 tsp Ener-G Egg Replacer
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 6 tbsp water
  • 1/2 cup raisins


Preheat oven to 325 degrees F.

Sift flour, spices, salt and baking soda together. In another bowl cream together shortening, sugar, molasses and egg replacer. Alternately stir flour mixture into shortening mixture.

Stir in water and raisins. Drop by tablespoon 2 inches apart onto greased cookie sheet.

Bake for 15 minutes.
