Vegan Orange Shortbread Cookies

A sweet orange shortbread cookie recipe, made with orange zest and orange juice. These easy shortbread cookies are also vegan, so they are a bit healthier than other shortbread cookie recipes.

Ingredients:

  • 3 cups flour
  • 1/3 cup sugar
  • zest from 1 orange
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup vegan margarine
  • 1 cup soy yogurt
  • 1/3 cup orange juice
  • 1/2 tsp vanilla

Preparation:

In a large bowl, combine the flour, sugar, orange zest, baking powder and baking soda.

Cut in the vegan margarine and mix well. Add the remaining ingredients and stir to combine. Dough will be dry, so you may need to use your hands for this.

Roll out the dough on a lightly floured surface to about 3/4 inch thick. Slice into rectangles approximately two by three inches.

Place on a baking sheet and bake at 375 degrees for 10 to 12 minutes, or until done.

Suspect quantities, Guest mjmm

I just made this with my daughter, and we found the quantities to be less than accurate. We followed the instructions to the letter, but still ended up with a huge amount of very very wet and sticky dough. We had to add at least another two cups of flour until eventually we were able to roll the dough out. On the plus side, the taste is very nice, not very strong, but that might be because we had to add so much flour. (We added self-raising so that we wouldn't lose raising capacity.) We like the result well enough, but it was a hassle to put the recipe right. If someone wants to try this, I would advice adding half the wet ingredients and then adding very little at a time until the right dough is achieved.
