Sugar-Free Banana Cookies

These refined sugar-free banana cookies are made with molasses instead of refined sugar, oats, ginger, nutmeg, and, of course, bananas! Make them for breakfast, after-school snacks, or pack them for a long road trip or overnight hike - they're pretty nutritious, too.

Ingredients:

  • 2 bananas, mashed
  • 1/2 cup molasses
  • 2 cups quick cooking oats
  • 1 cup flour
  • 2 tsp baking soda
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/3 cup chopped walnuts

Preparation:

Pre-heat oven to 350 degrees.

Mix together the bananas and molasses until well combined. Add remaining ingredients and mix well.

Drop by spoonfuls onto baking sheet. Bake for 12-15 minutes until lightly browned.

Surprisingly tasty and easy to make, Guest Jojo

I mashed the bananas to a lumpy texture and used a mixture of molasses, malt and honey at the same quantity. The mixture was a good texture. Baked well, found a little longer than stated was needed. They tasted at their best when still warm from the oven. A very tasty treat. Thanks
