Vegan Ginger Molasses Cookies
I absolutely love vegan molasses cookies! This is a recipe for vegan molasses and ginger spice cookies. Vegan molasses spice cookies definitely have a wintery holiday Christmas feel to them, but I say, anytime is a great time for sweet ginger spice cookies!

Ingredients:

  • 3/4 cup margarine
  • 1 cup sugar
  • Ener-G Egg Replacer for 1 egg
  • 1/4 cup molasses
  • 2 tsp baking soda
  • 1 tsp ginger
  • 1 tsp ground cloves
  • 1/4 tsp nutmeg
  • 2 cups flour

Preparation:

Pre-heat the oven to 350 degrees.

Cream together the margarine, sugar and egg replacer until smooth. Add the remaining ingredients and stir to combine well.

Cover and refrigerate for at least 30 minutes.

Roll the dough in to 1 inch balls and place on a baking sheet.

Bake for 8 to 10 minutes, or until done.

Yummy, but watch the recipe...., Guest AMG

We really liked the flavor. However, we decreased the flour by about 1/4 cup and baked for 12 minutes. They were crisp outside and moist inside.
