Healthy Fig and Date Cookies

Ingredients:

  • 3 bananas
  • 1 cup walnuts
  • 1 cup figs
  • 1 cup dates, soaked in water for 20 minutes, then drained
  • 1 tsp vanilla
  • 2 cups oatmeal

Preparation:

Pre-heat oven to 350 degrees.

Process all ingredients except oatmeal in a food processor until smooth. Add oatmeal and combine well.

Drop by spoonfuls onto a baking sheet and bake for 10-12 minutes or until lightly browned.
