Ingredients:
- 1 cup margarine, softened
- 1 cup powdered sugar
- 1/2 cup sugar
- 1 1/2 tsp Ener-G egg replacer
- 2 tsp vanilla
- 2 1/4 cups whole wheat flour
- 1/2 tsp baking soda
- 1 cup currants
Preparation:
Combine butter, sugar, egg and vanilla. Beat until light and fluffy.Combine flour and baking soda. Stir into butter mixture. Mix well. Stir in currants.
Shape into a 12-inch roll. Cover. Chill until firm. Slice into one inch slices. Place on ungreased cookie sheets.
Bake at 350 degrees for 10 to 12 minutes. Cool on wire racks.
