Vegan Currant Cookie Recipe

Vegan Currant Cookie Recipe. This vegan cookie recipe is courtesy of Ener-G Foods.

Ingredients:

  • 1 cup margarine, softened
  • 1 cup powdered sugar
  • 1/2 cup sugar
  • 1 1/2 tsp Ener-G egg replacer
  • 2 tsp vanilla
  • 2 1/4 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1 cup currants

Preparation:

Combine butter, sugar, egg and vanilla. Beat until light and fluffy.

Combine flour and baking soda. Stir into butter mixture. Mix well. Stir in currants.

Shape into a 12-inch roll. Cover. Chill until firm. Slice into one inch slices. Place on ungreased cookie sheets.

Bake at 350 degrees for 10 to 12 minutes. Cool on wire racks.
