Ingredients:
- 1 cup powdered (confectioners') sugar
- 1/4 tsp cinnamon
- 1 tbsp soy milk
- 1/4 cup sugar
- 1 tbsp cornstarch
- 1 cup plus 2 tbsp water
- 2 cups raisins
- 1/2 cup margarine
- 1 cup brown sugar
- 1 1/4 cup flour
- 1/2 tsp baking soda
- 1 1/2 cups rolled oats
Preparation:
Mix the powdered sugar, cinnamon and soy milk in a large mixing bowl and set aside.Combine the granulated sugar and cornstarch in a saucepan. Stir in one cup water and the raisins and cook over medium heat until it becomes thick and bubbly, about ten minutes. Set aside and cool.
Pre-heat the oven to 350 degrees. Grease a 9 x 13 inch baking pan.
Cream the margarine and brown sugar together. Add the flour and baking soda and mix well. Stir in the oats and remaining tablespoon of water. Mix until crumbly.
Put half the oat mixture into the pan and spread the raisin filling on top. Sprinkle the rest of the oat mixture on top of the raisin mixture and pat smooth.
Bake for 35 minutes, or until bars set. Let cool, then cut into bars.
