Sugar-Free Vegan Chocolate Rum Cookies

A sugar-free vegan chocolate cookie flavored with a bit of rum! Be sure to use unsweetened chocolate and an unsweetened soy milk to make these vegan cookies truly refined sugar-free. These sugar-free chocolate cookies would be perfect for a festive vegan Christmas party! See also: More Sugar-free Cookie Recipes

Ingredients:

  • 1/4 cup vegetable oil
  • 1/4 cup soy milk
  • 1/2 cup maple syrup
  • 3 tbsp rum
  • 2 oz unsweetened chocolate, melted
  • 2 1/4 cups flour
  • 1/2 tsp baking soda
  • 1/2 cup chopped walnuts (optional)

Preparation:

Pre-heat oven to 350 degrees.

Whisk together the oil, soy milk and maple syrup until well mixed. Add rum and melted chocolate, then remaining dry ingredients, adding the nuts last.

Drop by spoonfuls onto a baking sheet and bake for 7-9 minutes.

Not as good as I had hoped.., Guest

The cooking time wasn't enough, and there wasn't enough wet ingredients to get it mixed well. They came out very bitter. And too soft inside but crunchy on the outside. I am hoping that I just did something wrong, but sadly I followed the directions very exact.
