Easy Chocolate Peanut Butter No Bake Cookies

Though you don't need an oven to make these easy vegan no-bake cookies, you do need to melt the chocolate, either over low heat on the stove or in the microwave. Chocolate peanut butter no-bake cookies are very easy and simple to prepare. Be sure to use vegan chocolate to make these no-bakes vegan.

Ingredients:

  • 2 cups graham cracker crumbs
  • 3/4 cup peanut butter
  • 3 1/2 cups powdered sugar
  • 1 cup margarine, melted
  • 1 cup chocolate chips

Preparation:

Combine the graham cracker crumbs, peanut butter, powdered sugar and melted margarine and mix well. Roll this mixture into one-inch balls on a cookie sheet and chill.

Place the vegan chocolate chips in a plastic bag and melt in a bowl of hot water or in the microwave.

Snip off a corner of the plastic bag with scissors. Squeezing the plastic bag, drizzle chocolate over the cookies. Return the cookies to the refrigerator until the chocolate is set, about 20 minutes.

good with substitutions, Member rileysoprano

I replaced the cookie crumbs with oatmeal, used natural peanut butter and earth balance and they were pretty good. Next time I think I might try to reduce the sugar a bit, they were VERY sweet.
