Super Moist Vegan Carrot Cake Recipe. Frost with a vegan cream cheese frosting. You might also want to try this recipe for an orange flavored vegan cream cheese frosting.

Ingredients:

  • 1/4 cup cinnamon applesauce
  • 1 tsp vanilla
  • 1/2 cup vegan margarine, softened
  • 1 tsp salt
  • 1 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 cup sugar
  • 1 1/4 cups flour
  • 1/4 cup soy milk
  • 1 cup grated carrots
  • 1 cup walnuts, chopped

Preparation:

Pre-heat oven to 325. Grease and flour a 9-inch square baking pan.

Combine applesauce, vanilla, vegan margarine, salt, baking powder, cinnamon, sugar, flour and soy milk until well mixed. Add carrots and walnuts.

Spread batter evenly in baking pan. Bake for 45 minutes.

Allow to cool. Frost with a vegan cream cheese frosting. You might also want to try this recipe for an orange flavored vegan cream cheese frosting.

I had a little party to celebrate my son's 17th birthday last Saturday. I had never made a vegan cake (we don't eat a lot of sweets at home), so this was MY first attempt. My son has made a couple of chocolate-y ones, but they were dry, and I never had more than a bite of any of them. He's been a vegan for almost a year now, and most of his friends are either vegan or vegetarian. I doubled the recipe, and used vanilla soy milk instead of plain, and added about 1/3 C more applesauce than called for. I also substituted the walnuts with pecans. It was SOOOOOOOOOOOOOO good! All the teenagers ""oohed & ahhhhh'd"" appropriately (getting big points from Mom) and asked for seconds. We live in a small town, so I didn't have access to the vegan cream cheese, and instead I just sprinkled a little powdered sugar on the very top instead of making icing. (Still moist!) It was quick, easy, and wonderful! I might change my mind on cake after this!
