User Rating 5 Star Rating (1 Review)

Use fresh chopped mint and egg replacer to make a vegan chocolate mint cake recipe. Most chocolate mint cake recipes use mint extract, but this one uses fresh mint for a genuine flavor instead. Yum!

  • Egg replacer for 2 eggs
  • 1 cup soy milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla
  • 1 cup boiling water
  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup cocoa
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup fresh mint, minced

Pre-heat oven to 350 degrees. Lightly oil a 13 x 9 cake pan.

Mix together the egg replacer, soy milk, oil, vanilla and water.

In a separate bowl, combine the sugar, flour, cocoa, baking soda and salt. Slowly add to the wet ingredients and stir to combine. Add the fresh mint.

Pour into cake pan and bake for 30 to 35 minutes, until a toothpick inserted into the cake comes out clean.

Great recipe! Very easy to make, and with just the right balance of chocolate and mint. The real mint makes this recipe taste fresh and natural. I added chocolate frosting with chopped up mint-chocolate bits on top, but you don't really need that to enjoy this recipe.
