Ingredients:
- 1/4 cup applesauce
- 1 tsp vanilla
- 1/2 cup vegan margarine, softened
- 1 tsp salt
- 1 1/2 tsp baking powder
- 2 tsp cinamon
- 1 cup sugar
- 1 1/4 cups flour
- 1/4 cup soy milk
- 1 cup grated carrots (use a food processor)
- 1 cup chopped walnuts (optional)
Preparation:
Pre-heat oven to 325 degrees and lightly grease and flour a 9-inch square baking pan.Combine together all ingredients, adding the carrots and walnuts last. Spread batter evenly in the baking pan.
Bake for 45 minutes.
