Vegan Banana Cake

Banana cake is a popular Kwanzaa dessert, and this vegan banana cake will certainly hit the spot! With lots of bananas, you need less oil, so this vegan banana cake is lower in fat than other recipes. Scroll down for more vegan cake recipes and Kwanzaa recipes to try.

Ingredients:

  • 2 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/4 cup oil
  • 4 ripe bananas, mashed
  • 1/4 cup water
  • 1 tsp vanilla

Preparation:

Pre-heat oven to 350 degrees. Lightly grease a 9-inch square baking pan.

In a small bowl, combine the flour, baking soda and salt. In a separate large bowl, whisk together the sugar and oil, then add bananas. Add water and vanilla, stirring to combine.

Add the flour mixture, stirring just until wet.

Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.

tasty and more-ish, Guest Nadi

This is moist, banana-y, and not too rich. I substitute soy milk for the water just to make it a bit cake-ier and demarera sugar instead of white. I cook it in a loaf tin so it takes a bit longer. After the first 45 mins I wrap it in aluminum so the top doesn't burn and leave it in the oven for another 10-15mins. It tastes good slathered in lemon icing ;)
