Ingredients:
- 1/2 cup vegan margarine, softened
- 1 cup sugar + 2 tbsp
- Egg replacer for 4 eggs
- 1 1/2 cups flour
- 1/2 tsp baking powder
- 2 tbsp soy milk
- 4 or 5 apples, sliced
- 1/2 tsp cinnamon
- 1/2 cup sliced almonds (optional)
- 1 tbsp powdered sugar
Preparation:
Pre-heat oven to 400 degrees and lightly grease a cake pan.Whisk together the vegan margarine, one cup of sugar and egg replacer until well mixed. Add the flour and baking powder and stir to combine. Add the soy milk until the batter is smooth and creamy, adding more or less as needed.
Pour the batter into the cake pan. Gently place the apple slices on top of the batter, then sprinkle with the cinnamon and the 2 tablespoons sugar.
Bake for 25 to 30 minutes or until a knife inserted in the center comes out clean.
Sprinkle the torte with the almonds and powdered sugar then allow to cool.
