Topping off a vegetarian scrambled tofu with cheese can help you in the transition period if eating foods like tofu are new to you and you're not certain you'll like it. On the other hand, if you're already a seasoned vegan, try this easy scrambled tofu using a soy cheese or any kind of vegan cheese substitute instead of regular cheese. 

Another quick recipe note: As written, this recipe serves four to five people, so if you're cooking for fewer, you may want to halve it, particularly if you are serving it alongside some other breakfast dishes. Unless you have two or three very, very hungry folks, in which case, make the full amount!

Serve the tofu scramble with toast or biscuits and a fruit salad or green salad for a simple but tasty breakfast or brunch. Or stuff it into a burrito for a quick meal on the go.

Ingredients

  • 2 blocks firm or extra-firm tofu, crumbled

  • 2 tablespoons oil

  • 1 green bell pepper, diced

  • 4 scallions, thinly sliced

  • 1 (15-ounce) can diced tomatoes, drained

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon turmeric

  • 1/2 cup shredded cheddar cheese, or Swiss cheese

  • Salt, to taste

  • Freshly ground black pepper, to taste

  2. Prepare the tofu by pressing it to remove excess moisture.

  3. Once your tofu is well pressed, crumble or chop it into small bite-sized pieces.

  4. Add the oil to a large skillet over medium meat. Saute the crumbled or diced tofu with the bell pepper and scallions until the tofu is lightly browned.

  5. Add the tomatoes, garlic powder, onion powder, and turmeric, stirring to combine well. Cook, tossing, for another 6 to 8 minutes until hot and cooked.

  6. Season generously with salt and pepper and top with the cheese (or vegan cheese) just before serving.

Tips

  • Firm or extra-firm tofu are recommended for this recipe. The firmer texture stands up better to sauteeing and is good at mimicking the texture of scrambled eggs.
  • Like most vegetarian and vegan tofu recipes, this tofu scramble recipe will turn out best if you press the tofu first. Why? Tofu is like a sponge; the more water you gently press out of it, the more delicious marinade it can soak up.
