Ingredients:
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 1 package firm or extra-firm tofu, well pressed
- 6 green onions, chopped
- 1 tbsp soy sauce
- 1 tbsp fresh ginger, minced or grated
- 4 tbsp peanut butter
- 1/4 cup coconut flakes
Preparation:
Slice tofu into rectangles about 3/4 inch thick.In a large skillet over medium heat, cook the tofu and green onions in the olive oil and sesame oil for 2 to 3 minutes.
Add remaining ingredients, except coconut and cook, stirring gently, for another minute, until ingredients are incorporated.
Gently toss with coconut flakes and serve immediately.
