Pineapple Soy Glazed Tofu Recipe

Sweet pineapple glazed tofu - yum!

A sweet glazed tofu with pineapple and just a hint of salty soy sauce. You may want to double the sauce ingredients and add some noodles, or serve this sweet glazed tofu dish over rice. The kids will devour this delicious tofu.

Ingredients:

  • 1/2 cup pineapple preserves
  • 2 tbsp soy sauce
  • 1/2 cup orange juice or pineapple juice
  • 2 tbsp oil
  • 1 block firm tofu, diced into cubes
  • 2 cloves garlic
  • 2/3 cup diced pineapple
  • 3/4 tsp cornstarch
  • 2 scallions, chopped (optional)

Preparation:

Whisk together the pineapple preserves, soy sauce and orange juice.

Sautee garlic and tofu in oil until tofu is lightly browned. Reduce heat and add pineapple sauce and pineapples, stirring well to combine. Heat for 2-3 minutes, then add cornstarch, whisking to avoid lumps.

Heat one more minute, until sauce thickens.

Delicious and pretty simple!, Guest Mike

I was looking for something to make for our Shabbat (sabbath) meal and this seemed liked a bit different from what I usually make. It definitely needed a little bit more than just pineapples and tofu though, so I sauteed a quarter of a sweet onion with some sea salt before I sauteed the tofu and garlic (I figured the sweetness would pair with the pineapple). It came out great! I served it over brown rice that I flavored with garlic and chives. The only thing that was a bit different from the recipe was the fact that I needed a lot more cornstarch than what they used. No worries though!
