Ingredients:
- 1/2 cup pineapple preserves
- 2 tbsp soy sauce
- 1/2 cup orange juice or pineapple juice
- 2 tbsp oil
- 1 block firm tofu, diced into cubes
- 2 cloves garlic
- 2/3 cup diced pineapple
- 3/4 tsp cornstarch
- 2 scallions, chopped (optional)
Preparation:
Sautee garlic and tofu in oil until tofu is lightly browned. Reduce heat and add pineapple sauce and pineapples, stirring well to combine. Heat for 2-3 minutes, then add cornstarch, whisking to avoid lumps.
Heat one more minute, until sauce thickens.
