Ingredients:
- 1/2 cup pineapple preserves
- 2 tbsp soy sauce
- 1/2 cup orange juice or pineapple juice
- 2 tbsp oil
- 1 block firm tofu, diced into cubes
- 2 cloves garlic
- 2/3 cup diced pineapple
- 3/4 tsp cornstarch
- 2 scallions, chopped (optional)
Preparation:
Whisk together the pineapple preserves, soy sauce and orange juice.Sautee garlic and tofu in oil until tofu is lightly browned. Reduce heat and add pineapple sauce and pineapples, stirring well to combine. Heat for 2-3 minutes, then add cornstarch, whisking to avoid lumps.
Heat one more minute, until sauce thickens.
