Easy Tofu Scramble

Tofu scramble is a popular vegan breakfast dish similar to scrambled eggs. Although this recipe calls for onions and green peppers, try adding some mock meat crumbles, or experiment with different vegetable combinations, such as spinach, mushrooms and green onions. The possibilities for tofu scramble are endless! Try a curried tofu scramble with spinach or this cayenne spicy tofu scramble. Wrap in a flour tortilla for an easy breakfast burrito.

Yield: 2 servings of tofu scramble


  • 1/2 yellow onion, diced
  • 1/2 green bell pepper, diced
  • 1 block tofu, drained and pressed
  • 2 tbsp oil or margarine
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp soy sauce
  • 2 tbsp nutritional yeast
  • 1/2 tsp turmeric (optional)


Slice the tofu into approximately one inch cubes. Then, using either your hands or a fork, crumble it slightly.

Sautee onion, pepper and crumbled tofu in oil for 3-5 minutes, stirring often. Add remaining ingredients, reduce heat to medium and allow to cook 5-7 more minutes, stirring frequently and adding more oil if needed.

Wrap in a warmed flour tortilla with a bit of salsa for a breakfast burrito or top with soy or dairy cheese. Serves two.

Fast & easy for tofu novices, Guest Kay

I'm just learning to cook with tofu, and I am not a vegetarian or a vegan. I have tried this recipe with Firm, Extra Firm, and Soft tofu. All work but I liked Firm best. I added one egg whisked into the Soft one, btw, for texture. I do drain and press my tofu first. The spice combo is fabulous! I wouldn't change that & I do like the turmeric included. I've also tried it with different peppers and different onions. They all work! Just use your favourites and the quantity you desire. I don't bother with the tortilla shell, although that is a favourite scrambled egg trick of mine. This recipe is so flavourful and satisfying served up on a plate. A little salsa on the side or ketchup is not a bad thing. Thank you for such a great recipe!!
