An easy homemade jasmine rice recipe with coconut. This vegetarian and vegan jasmine rice recipe is a simple side dish to accompany a vegetarian baked tofu, Thai vegetable dish, or whatever Asian delicacy you're cooking up.
Ingredients:
- 1/4 cup olive oil
- 1 medium onion, diced
- 2 ribs celery, chopped
- 1 medium carrot, diced small
- 2 cups jasmine rice
- 2 cups water or vegetable broth
- 2 bay leaves
- 1 cup unsweetened coconut milk
- 1 tbsp salt
- 1/2 tsp black pepper
- 2 cups green peas, frozen
- 3/4 cup toasted coconut (optional)
Preparation:
In a large soup or stockpot, eat oil and sautee onions, celery can carrots for 8-10 minutes, until almost sfot.
Add rice, water or vegetable broth, bay leaves, coconut milk, salt and pepper. Bring to a simmer, reduce to a boil, and allow to cook until rice is done, about 30 minutes.
Stir in green peas and top with optional fresh coconut.
