Barbecue baked tempeh

Tempeh is baked in a barbecue sauce marinade in this super easy and delicious baked tempeh recipe. Use your baked tempeh to top off a pile of brown rice, or, slice open a sourdough roll and make a vegetarian baked tempeh sandwich, topped with lettuce, tomato and perhaps some mayo.

Ingredients:

  • 1 pound tempeh
  • 1/2 cup soy sauce
  • 1/2 cup apple cider vinegar
  • 1/2 cup maple syrup
  • 1/2 cup olive oil
  • 2 tsp chipotle powder
  • 1 tsp sweet paprika
  • 1 tsp cumin

Preparation:

Preheat toven to 350 degrees.

Cut the tempeh in half lengthwise, then cut the 2 slabs in half widthwise (like a bagel) creating four even pieces. Next, cut the tempeh into smaller strips, about 1 by 3 inches. Place in a baking pan.

Whisk together the remaining ingredients an pour evenly over the tempeh, coating evenly. Allow to marinate, covering occasionally with sauce, for at least 20 minutes. One hour is better.

Cover baking pan with aluminum foil and bake for 20 minutes. Remove foil and bake, uncovered, for an additional 10 minutes.
