Quick Stir-Fry Vegetarian Mock Chicken Salad

Ingredients:

  • 1 vegetarian Chicken Free Chicken, cut into 1 inch strips
  • 2 ounces fresh green beans
  • 2 ounces red or green bell pepper, cut into 1/4 inch strips
  • 1 ounce red onion, sliced
  • 1 tomatoe, sliced
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar
  • garlic, to taste

Preparation:

Stir fry onions and pepper for two minutes. Add green beans, garlic and Chicken Free Chicken. Stir-fry 3 additional minutes. Served hot or chilled.
